nvidia-xconfig will create a usable xorg.conf that will include the nvidia 
driver and, in addition, will add other options that can be specified on the 
command line.
Example: nvidia-xconfig --depth=30 --output-xconfig=my-xorg.conf

This xorg.conf will also merge in options that may already be present in your 
existing /etc/X11/xorg.conf

I track the testing distribution, use only the nvidia drivers packaged by 
debian and have no problem at all using OpenGL applications like flightgear. My 
xorg.conf includes outputs from nvidia-xconfig as well as other options I added 
manually.
