Hi Josef, thanks for bugreport. I think we should fix the documentation, that is true. I do not really see any reason, why gitstats depends on gnuplot-nox, not gnuplot itself. gnuplot-nox is the minimal version of gnuplot, so it should not be any problems to use -x11 or -qt.
Please ask gistats maintainer to change dependency.
