I'm concerned that it could make (meta) ceph.service a bit uglier...
Perhaps those minority of users who runs more than one MDS could just create
another .service file? Anyway we will follow your lead here and will use
"ceph-mds" or "ceph-mds@" depending on what you decide...

Due to systemd .service file limitations it is hard to make it tunable since
LimitNOFILE do not take variables. What are the disadvantages of hardcoding it
to higher value? I'm not sure what's best to do...
