Also /etc/init.d/amavis* and /etc/default/amavis*.  And you forgot to attach
the amavisd.conf file :-)

I *think* you have a problem with perl.  I cannot reproduce it here (i386),
and really:

That would have caught my eye immediately were it an amavisd-new bug, and it
would have been reported quite a while ago too, the amavisd-new you are
using is in *sarge*, and it has been there for a damn big while now.

So either a perl change broke it, or it rooted out a latent bug.

As long as your mirror is current, and you did an "aptitude update"
beforehand, an "aptitude upgrade" (or dist-upgrade) would be all you need to
do, to have an up-to-date system.
