Either way round works. -1+deb8u1 as above, as "jessie plus some other changes" (which happen to be equivalent to -2), or -2~deb8u1 as "backport -2 to jessie". In the latter case I'd expect the changelog to have -2~deb8u1 as a simple "rebuild for jessie" entry, followed by the -2 to unstable, in the same way as one would for a backports upload.
