'mini-buildd --help' has documentation on this ('--debug=keep'); just put this to /etc/default/mini-buildd (preferably by 'dpkg-reconfiguring' mini-buildd). Maybe some explicit http://mini-buildd.installiert.net/extra/mini-buildd/documentation/admin.html#logging-and-debugging mentioning here is what you are after? Hth, S
