If one mentions unstable in /etc/fai/make-fai-nfsroot.conf:FAI_DEBOOTSTRAP then debootstrap won't know what that is. If he tries sid then apt might experience difficulties because RELEASE files tend to use unstable. I have tried to explain that in the patch. I am not an expert about that either.
