Indeed, auctex cannot be installed in a clean pbuilder chroot. It additionally needs autoconf and a gs implementation. I think in the long term, the packaging should be optimized so that the autoconf dependency can be dropped - IMHO development packages should be avoided as desktop packages' dependencies.
