You say --no-sign and --unsigned-buildinfo options are unsupported by
dpkg-buildpackage, but:
# dpkg-buildpackage --help | grep -- no-sign
      --no-sign               do not sign any file.
# dpkg-buildpackage --help | grep -- unsigned-buildinfo
  -ui, --unsigned-buildinfo   unsigned .buildinfo file.
