Hum, interesting. I had a custom ~/.fonts.conf which was a symlink to the actual configuration file in a Git repository checkout somewhere else.
Removing the symlink and/or transforming the symlink into an actual hardlink or a "real" file makes Libreoffice work.
However, having this file as a hardlink or a real file crashes some other applications, although they were fine with the symlink variant.
I ended up removing ~/.fonts.conf in the meanwhile which seems to satisfy most applications.
