quilt itself is the "standard" patching system for Debian packages
(bit of an exaggeration since Debian is too de-centralized to make
something like that an absolute requirement but it is very popular).

However, I'm unaware of anyone using gquilt and had never heard of it
until I started working on pygtk's removal.
