I tried exactly the same steps but for me saving the files after
changing metadata is working.

I couldn't find any read-only setting for Music in any profile/include.
Are there maybe other .local files that could set it to read-only?
The exfalso profile also has private-cache (for .cache) and private-tmp.
Do you have set these directories (where perhaps the files are saved
temporarily) somewhere as read-only or even blacklisted?
Can you try disabling some of the "include disable-" and "private-" lines?
