After having logged into the other box with ssh -X, run in that ssh
session:

  gpg-connect-agent updatestartuptty /bye

This tells gpg-agent on which DISPLAY or tty it should pop up the
pinentry.  In contrast to gpg ssh and the ssh-agent protocol have no way
to convey the DISPLAY and other envvars to gpg-agent, thus you need to
tell it manually.
