I am sorry for the late reply, as I was on vacation.

On a Acer TravelMate 5735Z with Debian Sid/unstable, upgrading the
package `grub-pc` causes GRUB to fail on next boot and drop into a
rescue shell.

It only seems to effects MBR installation.
I missed to report, that the system has a separate `/boot` partition and
a LUKS encrypted root `/`.
Sorry, please scratch that. I remembered incorrectly. It’s just one
unencrypted F2FS formatted partition.
How many disks do you have on your system, please?
*If* you have more than one, there's a potential for grub-install to
have not been run to install grub to all the MBRs, and then the BIOS
finds an old copy of the GRUB first-stage loader but tries to use
newer modules. this mis-match can cause all kinds of problems. :-/
There is only one disk in that laptop.
Kind regards,
Paul
