One issue I immediately noticed is that /etc/init.d/mariadb was installed 644, i.e. is not executable. May advice would be to keep (emtpy) transitional packages mariadb-server-10.6/mariadb-client-10.6 and mariadb-server-10.5/mariadb-client-10.5 which itself depend on the unversioned mariadb package. This will not only make the upgrade smoother, it will also ensure that if you purge the empty transitional packages, you do not accidentally remove any import configuration state. Post bookworm you can then safely drop those empty transitional packages.
