Ok, this is because it was a bug in dpkg which was fixed yesterday... (it was related to DEB_VERSION_UPSTREAM, which you use in debian/rules). If you still want to reproduce the bug, try building your package in trixie right now, as the dpkg fix has not propagated to testing yet. I'm fixing the metadata above. Thanks a lot.
