This bug aims to make it easier to track progress on the list of ungoogled-chromium [1] patches [2] that are potentially under consideration for improving Debian Chromium privacy. There's an ITP for a parallel "ungoogled-chromium" package filed as bug #939046 [3] with stated intentions to package made in 2019 and 2020 by two different people. Personally, I don't see any point creating a parallel package: anyone who understand chromium code well enough to be able to propose ungoogling should best work with Debian Chromium maintainers for the existing package. Feel free to improve the Debian wiki comments on Chromium privacy risks [4].
