I have also observed this bug. It's pretty annoying. In the example I'm seeing right now, an email was forwarded to me by a Mac Thunderbird user; Thuderbird attached the original email in a multi-part MIME message.
When I try to forward the whole thing, evolution flattens the various attached messages into a single text stream but includes only a few of the the headers from the original message, and none of the body text. The original email is confidential but let me know if you really need an example and I'll see if I can cook one up.
