It's definable (setting mail_owner in main.cf) but by default runs as 'postfix'.
A wrinkle is the out of the box debian package runs smtpd chrooted so you've got to change that line in master.cf so it can get at the socket (there's probably a way of putting the socket in the chroot but I don't know if there's a debianised way of doing that automatically - might be worth asking the postfix maintainer).
