In the Screen section, add:
Option "Monitor-VGA" "my vga monitor"
Then add a new section like this:
Section "Monitor"
Identifier "my vga monitor"
Option "PreferredMode" "1600x1200"
EndSection
This is from memory, so I might have misremembered something; see
xorg.conf(5) for the details.
