I can confirm that AltGr works with those settings. Is there a
supposed-to-be working compose key, to type my name? ;)

I have also found out, that issueing 
setxkbmap -rules xfree86 -model pc105 -layout de -option "deadaccute"&
works to resolve the problem.

That line is now in my .gnomerc as a workaround.
