The avahi-daemon should be started via the start-stop-daemon. The reason for this is, that it should not be started in a chroot'ed environment, e.g. a NFS-exported R/O client root. The start of an unwanted process in the changeroot-ed environment can usually be avoided by a fake start-stop-daemon-script, that calls the real start-stop-daemon not on the NFS server itself, but on all client hosts.
