Looking closer it makes sense: gnome-bluetooth declares a "Conflicts:" against bluez-gnome which blueman provides. The only explanation I can imagine for you being unable to reproduce is if you a) use a different distro than Debian Sid or b) use a packaging tool that ignores conflicts. NB!
