Hi Johannes, there are many ways in which 1-way sync could work. You can now make a repository "read-only" so that it will never be modified. But this is not what you want and to be honest it would fit very awkward with the way OfflineImap operates.
I would think your best bet is to have a postsync hook that moves all mails that have been downloaded into a maildir directory that is not handled by offlineimap. This serves your purpose quite well, I'd think, and it is basically already built into offlineimap :). Would that work for you?
