if you choose to use the theme, then the theme gets used in the config.

if the config uses it, and you remove it, then re-populating the config
(which is what extlinux-update does), fails.

so no surprise there.

however..

..i'm not fond of 'falling back to no-theme' gracefully, that way the
users bootloader 'experience' wout 'silently' get changed (a note during
postinst or during extlinux-update is too weak, nobody reads it
anyway/it's too easy to miss or overlook it).

or in other words, if you have no better idea how to handle such cases,
i'd stick with 'it is not a bug but a feature'.
