I suspect it is better to do this as a separate udeb, say desktop-chooser, which when pulled into debian-installer will ask for what desktop to use. It would be usable in the normal debian installation and also by Debian Edu. :) Options should probably be Gnome, KDE, LXDE, Sugar, but there might be some desktops I have forgotten.
