Ah you use LVM. There's a known problem with it's circular metadata which isn't yet fixed upstream but there's a patch floating around which solves this. Maybe that's your problem. I just tried now a mdraid md2 which goes over mdraid md1 and md0 and this didn't lead to a segfault in grub-probe.
