Uhm why didn't you just choose `execute a shell in /dev/sda1' or whatever your / is from the rescue options? The problem is that you didn't bind mounted /dev so there are no devices for your disks because udev creates them which isn't run in a chroot. If you choose the `execute a shell in' option /dev gets mounted and so grub-probe should work.
