press ^K to remove the existing (possibly damaged) text and type
new text (possibly to change the subthread subject), the eMail

When just replying to a message without changing Subject, alpine
indeed keeps the headers just fine.

Given that it normally leaves the headers intact, and that the email client is still entirely usable even if you do hit this bug, I'm lowering the severity as it most certainly isn't RC worthy.
