libgccjit-{14,15}-doc both install files into /usr/share/info/. For one
thing, that's libgccjit.info.gz and for another image files below
libgccjit-figures.
The declared Conflicts likely need to be updated to cover yet another
gcc version.
Though I question whether a longer term fix would be

on all libgccjit-*-doc packages. Then you'd stop playing whack-a-mole.
