I keep snapshots of my system states and debs as I upgrade. It's not perfect, but it's easy to roll back massive fuckups immediately, and at least possible to roll back one-or-two packages from a couple weeks ago. (Really complex changes like the recent gnome upgrade still get confusing, though).
