It seems that dpkg transparently follows existing symlinks when installing subdirectories in the symlinked dirs (therefore no problem upon installation of the buggy version). But when the buggy version is removed, it removes all empty, unregistered parent directories, and it seems /usr/local is one of these - and it doesn't care whether it is in fact a directory or not.
