I can't give you the list, but I did notice that the CD lost a desktop package (check the commit messages for details). As long as the CD still contain the complete main-server profile, I believe it is OK to loose a few desktop packages from the CD. As for the DVD, I believe it lost texlive, which isn't installed by default. I believe that is ok too. But Steffen is right, it depend on what packages are dropped.
