Both OSes are using the same spine when related to firewall software, so it would not really change alot besides packaging systems. But if you are looking at a firewall only machine, if it is an x86 you could give m0n0wall a try (http://m0n0.ch) It is based on BSD and is a quite simple to setup firewall.
 
I know that you mentioned Debian and Suse but throwing in other ideas cannot be bad I guess.
