I agree with your proposed strategy.
I consider the upcoming OSGeoLive 8.5 release as a very good opportunity to get feedback for GRASS 6.4 to 7.0 switch.
The ticket has been updated to reflect current status.
Since grass70 packaging was done in a way to not conflict with grass64, the upgrade process was easy, only the qgis-grass plugin was removed from the Live.
