Hi,

I observed that all pipelines for lwip package in trixie fail:

https://salsa.debian.org/debian/lwip/-/commits/trixie

They fail because the package is being built on an unstable chroot instead of
trixie. The value is hardcoded in the pipeline yaml file:

https://salsa.debian.org/hurd-team/pipeline/-/blob/main/pipeline-jobs.yml?ref_type=heads#L8

The default value for RELEASE is:

`RELEASE: '$RELEASE_FROM_CHANGELOG'`

>From https://salsa.debian.org/salsa-ci-team/pipeline/raw/master/salsa-ci.yml,
>which we include in lwip pipeline.

I understand there are no trixie for the Hurd, so we have to hardcode
`unstable` there. But we shouldn't force the value for all other jobs.

I'm attaching a patch, assisted by AI since I don't have all the background
about pipelines right now. I hope it makes sense.
