I would like to reproduce the issue, and so far I'm unable to reproduce your issue. I need that to find the cause of the changed time.

My steps:
1) Enter the BIOS. Set the time and date to 2008-01-01T00:00:00
2) Start a terminal in the GNOME Live environment
3) 'date --iso-8601=seconds' -> shows 2022-03-15T11:02
4) 'sudo hwclock' -> shows 2008-01-01T00:00

Can you provide me with similar details?
