AFAIK you need this:
Content-Type: text/plain; charset=utf-8
MIME-Version: 1.0

If at the same time, you could also do it for mails sent to
[EMAIL PROTECTED] that would be great as accented
names are always unreadable (and some people like me like to follow this
list).
