J'ai rectifié en stable (Etch) : deb http://ftp.fr.debian.org/debian/ etch main contrib deb-src http://ftp.fr.debian.org/debian/ etch main contrib et j'ai enfin pu installer apache-ssl. Cela n'en reste pas moins bizarre ces deux comportements différents avec deux dépôts incohérents mais identiques.
