For woody, you should use Gustavo Noronha's excellent backport of GNOME 2. Add
the following to your /etc/apt/sources.list: 

deb http://people.debian.org/~kov/debian woody gnome2
deb-src http://people.debian.org/~kov/debian woody gnome2 

Next, just run:

apt-get update
apt-get install gnome gdm2
        
Note that at the time of this writing, there are only packages for i386 in
kov's repository. Also, these packages conflict with the GNOME 1 packages; you
will not be able to have both installed at the same time.
