en la pagina de www.ximian.com vienen las instrucciones de como bajarlo pero tienes que agregar al source.list
deb http://red-carpet.ximian.com/debian stable main luego le das #apt-get update #apt-get install evolution y listo; solo que te va a tardad porque tiene muchas dependencias; de preferencia instalate todo el desktop.
