I've been using postfix with courier-imap for about a year now, and no complaints. It takes a bit of tuning (non-obvious tuning, as well!) to make postfix not be an open relay, and you'll need to set it up to deliver to maildir (which is easy), but once it's in place, it_just_runs. And Courier is danged simple, and again, _just_runs_.
