Scott, I'm not sure how long it'll take, but on my PII 400 w/320 Meg RAM, it takes about 8 hours to transcode 390 megabyte divx to 50 minutes of DVD. I have no idea how the long the MOV files will take. I do know you will get better results if you can use the original source file vs. the MOV. The best resource I found for this type of task is: http://mightylegends.zapto.org/dvd/dvdauthor_howto.php This resource has been invaluable to me, and works well, though it is quite painstaking to follow.
