You could use a rewrite rule.  Add to the rewrite section of exim.conf
something like

    [EMAIL PROTECTED]        [EMAIL PROTECTED]

and then all messages with [EMAIL PROTECTED] will rewritten to say they were
sent by [EMAIL PROTECTED]  Alternatively (or as well), get a ddns.org
or DHS domain name for your machine.
