Thanks George. I looked in /etc/init.d and found the expected 'exim' file which starts the exim daemon if it hasn't been started by /etc/inetd.conf (at least that's my understanding). I noticed, however, that there was another unexpected file, 'sendmail' which was attempting to start a sendmail daemon. The date of the file was well before the date when I installed exim so I assume it was a leftover. Anyway I have backed-up and deleted this file and so far the mail system is still working.
