As a suggestion, after having the experience of trying to get evolution up and working last night (stil not quite successful), there are a number of dependencies to the evolution DEB file (which is supposed to be for Potato?) that appear only in Testing/Woody and Unstable/Sid.
In short, you'll probably at least need to make sure that you've updated to Testing, and possibly even Unstable, to make Evolution work.
