There's a few different methods:
1) remove the gdm package if you won't use it at all. - apt-get
remove gdm I believe
2) Remove the link from the /etc/rcX.d directory that starts gdm, where
X is your default runlevel (likely 5)
3) Change your default runlevel in /etc/inittab to a level that doesn't
start X (try 2)
levels 2-5 are the multi-user runlevels. 2 is usually bare bones
console access, which is probably what you want, and 5 is usually
full-fledged boot everything and the kitchen sink, including g/k/xdm.
