Bogofilter is *impressive*; also, the specific algorithm it uses is explained 
in the newest issue of New Scientist. (I think... or was it Scientific 
American?)

Of course, the explanation is also available online; look through the 
documentation for bogofilter and you'll find a reference; I don't have time 
right now.
