The tarballs on WineHQ are newer than the sources packages from Sid. The Sid wine is 0.9.30, the WineHQ is 0.9.32, exact what the differences are I cannot tell you. As to if Dreamweaver runs better on one version or the other I also cannot tell you. I don't use wine. If I were going to do it, I would use the ones from wine hq, otherwise I would just do apt-get install wine and get the binary from the repository. There is no reason I can see to build the deb-src if one already runs Sid.
