Users like many things (i.e., Hotmail/Livemail :-P) but and admin has also to care about another things (server requirements, performance, stability and security). And having to setup a SQL database server just for handling e-mail users can be a bit overwhelming and not suitable for small environments. IIRC, Squirrel used to have one or two requirements, but not sure for Roundcube. Can Roundcube run without a backend SQL database? :-?
